Why it works: Walnut and chocolate are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 1,548 recipes. Both carry 3-ethyl-2,5-dimethylpyrazine, which smells roasted, nutty. The science ↓

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Chop the walnuts, reserving 23 halves for decoration.

  2. Mix the chopped walnuts and grated chocolate.

  3. Beat the egg yolks thoroughly, add sugar, and beat again.

  4. Combine the yolk mixture with the nuts, crumbs, and chocolate, and stir well.

  5. Beat the egg whites until stiff and fold them into the mixture.

Bake

  1. Bake in a prepared springform pan at 350°F (175°C) for 45 minutes.

What each ingredient does

Walnuts
Provide the bulk of the torte, adding body and a nutty flavour in place of flour.
Eggs
Egg whites whipped to stiff peaks lighten the batter and help it rise and set in the oven.
Grated chocolate
Adds rich flavour and a fudgy texture to the batter.
Sugar
Sweetens the batter and helps stabilise the beaten egg yolks.
Cracker crumbs
Add light structure and absorb moisture so the torte holds together.

The step that matters

Folding in the egg whites. Stiffly beaten whites trap air that leavens the batter. Folding gently keeps that air in; stirring vigorously deflates the foam and makes the torte dense.

Swap the walnut
