Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main protein; browning in butter colors and flavors the skin before roasting.
Butter
Carries heat to the chicken and browns, adding nutty flavor and golden color to the skin.

The step that matters

Browning the butter. Butter's milk solids scorch quickly when overheated, turning bitter and dark. Browning them gently adds nutty flavor, and the Maillard reaction browns the chicken skin. Adding a little water, as the method says, slows the burning.

Swap the capers

How well each one fits the dish's main ingredients (chicken, butter, lemon, sugar, cream):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Cinnamonfits better
  4. Capersthe original

Fit is the average pairing score against chicken, butter, lemon, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
