Why it works: Tomato and rice match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 3,065 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Rice Soup with Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tomato base

  1. Remove the seeds from the tomatoes and stew them in a little water with the sliced onion.

  2. Strain the mixture through a colander.

Cook the soup

  1. Heat the butter in a pot, then add the tomatoes and rice, cooking for a few minutes while stirring.

  2. Add the stock and bring to a boil for five minutes.

  3. Cover the pot and place it in a 400°F (200°C) oven for one hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main flavor, acidity and most of the soup's body.
Onion
Adds aroma and mild sweetness as it softens in the stewing liquid.
Butter
Adds richness and carries flavor while the rice is cooked.
Rice
Absorbs liquid and softens, thickening the soup and giving it body.
Stock
Forms the main cooking liquid and adds savory depth to the soup.

The step that matters

Cover the pot for the oven. Covering the pot traps steam so the liquid stays in the pot while the rice absorbs it and softens evenly. Without a lid, the soup can reduce too far and the rice can dry out or stick to the bottom.

Swap the tomato

How well each one fits the dish's main ingredients (onion, butter, rice):

  1. Potatofits better
  2. Leekfits better
  3. Chivefits better
  4. Tomatothe original

Fit is the average pairing score against onion, butter, rice. Candidates are from the same food group and used in at least 100 recipes.
