Directions

Prepare the roll

  1. Remove the center bone and excess fat from the steak.

  2. Spread the dressing made of bread crumbs, melted butter, poultry seasoning, salt, and pepper over the steak.

  3. Press the dressing down firmly, roll the steak tightly, and tie securely with twine.

Brown and simmer

  1. Heat beef drippings or butter in a cast iron skillet.

  2. Add the beef roll and brown it on all sides.

  3. Transfer the beef roll to a Caloric kettle.

  4. In the skillet, blend the remaining fat with flour, then add boiling water and season with salt and pepper.

  5. Pour the sauce over the beef roll and boil for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Steak
Forms the outer meat wrapper that holds the dressing and becomes tender during the long moist cooking.
Soft bread crumbs
Absorb the melted butter and seasonings to form a moist, flavorful stuffing inside the roll.
Butter
Adds richness and fat that carries seasoning and helps the dressing stay moist.
Beef drippings or butter
Fat for browning the outside of the roll, building color and roasted flavor.
Flour
Thickens the fat and boiling water into a smooth sauce that coats the beef roll.

The step that matters

Brown the roll on all sides. Searing creates browned flavor through the Maillard reaction. Browning only part of the roll leaves pale patches and a flatter taste, so turn it until every side has colour.

Swap the white pepper

How well each one fits the dish's main ingredients (bread, butter, beef, flour, pepper):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against bread, butter, beef, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
