Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash the tomatoes and place them stem end down in a buttered baking dish.

  2. Make criss-cross cuts through the skin on the top of each tomato.

  3. Bake in a moderate oven at 350°F (175°C) until tender.

  4. Season each tomato with coarse sea salt, black pepper, and a bit of butter just before serving.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
