Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the peppers

  1. Wash the peppers, cut them in half crosswise, and remove the seeds and stems.

  2. Cook the pepper halves in boiling salted water for 10 minutes.

Fill and bake

  1. Mix the grated onion, chopped meat, salt, soft bread crumbs, and meat dressing together.

  2. Drain the peppers and fill each half with the mixture.

  3. Cover the filled peppers with the buttered bread crumbs.

  4. Place the peppers in a shallow baking dish containing the boiling water.

  5. Bake in a hot oven at 400°F (200°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green peppers
Form the edible shell that holds the filling and softens during cooking.
Cooked meat
Provides the savory, substantial filling that the other ingredients bind around.
Soft bread crumbs
Absorb moisture and bind the filling so it holds together when baked.
Buttered bread crumbs
Form a golden, crisp topping through browning in the oven.
Meat dressing
Adds moisture and seasoning to the filling, keeping it tender.

The step that matters

Drain the peppers before filling. Peppers released after boiling hold surplus water. Draining them well keeps the filling from becoming soggy and the bread crumbs from turning wet.
