Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Preheat the oven to 400°F (200°C).

  2. Beat the eggs in a bowl.

  3. Wipe and trim the beef, then chop or grind it with the onion.

  4. In a large bowl, mix the beef, onion, bread crumbs, eggs, salt, lemon juice, and pepper.

  5. Add enough milk or dressing to moisten the mixture so it holds together.

Shape and bake

  1. Shape the mixture into a loaf and dredge it with flour.

  2. Place the loaf in the hot oven and bake until well browned, about 1 hour.

  3. Reduce the heat and continue baking until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main protein that sets firm and gives the loaf its body when cooked.
Salt pork
Adds fat and moisture that keeps the lean beef from drying out.
Bread crumbs
Absorb liquid and bind the mixture so the loaf holds its shape.
Onion
Adds moisture and mellow sweetness as it cooks into the meat.
Lemon juice
Adds acidity that brightens the flavour of the meat.

The step that matters

Reduce the heat after browning. A hot oven browns the outside quickly, but the centre of a dense meat loaf cooks slowly. Lowering the heat once the surface is browned lets the middle reach a safe, fully cooked temperature without scorching the crust.

Swap the lemon
