Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat texture, which softens during long, gentle cooking.
Flour
Coats the beef for browning and later thickens the stew liquid.
Potatoes
Add starch that softens into the stew and adds body to the gravy.
Onion
Adds sweetness and aroma as it browns with the meat.

The step that matters

Browning the beef. Searing the floured cubes in very hot fat creates browned flavour through the Maillard reaction. Crowding the pan or under-heating it steams the meat grey, so the stew tastes flat.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, flour):

  1. Chivefits better
  2. Leekfits about as well
  3. Onionthe original
  4. Okrafits about as well

Fit is the average pairing score against beef, potato, flour. Candidates are from the same food group and used in at least 100 recipes.
