Angel Cake

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Mix the flour and sugar together and sift four times.

  2. Beat the egg whites with the salt until frothy.

  3. Add the cream of tartar and beat until stiff and dry.

  4. Add the vanilla and carefully fold in the flour and sugar mixture.

Bake

  1. Turn the batter into an ungreased mold lined with paper.

  2. Bake for 45 minutes to 1 hour in a cool oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Trap air when beaten, giving the cake its light, airy structure.
Sugar
Sweetens the cake and helps stabilize the whipped egg white foam.
Flour
Provides structure that sets the cake once heated.
Cream of tartar
Acidifies the egg whites, making the foam more stable and less likely to collapse.

The step that matters

Fold in the flour and sugar mixture carefully. Folding gently keeps the air trapped in the beaten egg whites. Stirring or deflating the foam makes the cake dense instead of light.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, sugar, cream, egg):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against flour, sugar, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
