Ingredients

Directions

Prepare the tapioca

  1. If using coarse or pearl tapioca, soak it in cold water for 1 hour before cooking.

  2. Mix the tapioca with a little cold water and stir it into the hot milk.

Make the pudding

  1. Add the salt and cook over boiling water until the granules are transparent.

  2. Beat the egg yolks with the sugar and butter, then stir this mixture into the pudding.

  3. Cook until thickened, about 3 minutes.

  4. Remove from heat.

  5. Add flavoring.

  6. Fold in the stiffly beaten egg whites.

Top and serve

  1. Optionally, mix the egg whites with sugar to make a meringue.

  2. Heap the meringue on the pudding.

  3. Brown in the oven.

  4. Chill.

  5. Serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in hot milk and thickens the pudding as its granules turn transparent.
Eggs
Egg yolks enrich and thicken the custard, while whipped whites add lightness.
Milk
Forms the liquid base that the tapioca cooks in and thickens.
Sugar
Adds sweetness and helps the meringue stay stable when whipped.
Butter
Adds fat for richer flavor and a smoother texture.

The step that matters

Cook until the granules are transparent. Tapioca starch only thickens fully once its granules gelatinize, which shows as clear granules. Undercooked tapioca stays chalky and grainy, while the pudding keeps thickening as it cools.
