What each ingredient does
- Coffee
- Supplies the flavor and aroma compounds that dissolve into the water.
- Boiling water
- Extracts flavor from the grounds and brings the brew to temperature.
- Cold water
- Cools the surface and helps the grounds sink so the coffee pours clearer.
The step that matters
Boiling for 3 minutes. Boiling extracts flavor from the grounds, but holding the coffee at a boil too long pulls out bitter compounds and makes the cup harsh. Keep the boil to the stated time and then remove the pot from the heat.
