Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the relish and release moisture that the salt draws out.
Cabbage
Adds crunch and bulk that holds up to long resting in brine and vinegar.
White onions
Add savory depth and sharpness that mellows during the resting period.
Cider vinegar
Acidity that preserves the relish and gives it its tang.
Sugar
Balances the acidity and vinegar with sweetness.
White mustard seed
Adds pungent flavour and a textured bite to the relish.

The step that matters

Drain well after salting. Salt draws water out of the vegetables. If they are not drained thoroughly, excess liquid dilutes the vinegar and makes the relish watery and less stable in the jar.

Swap the tomato

  1. Horseradishfits better
  2. Cauliflowerfits better
