Ingredients

Directions

The book says “a medium oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Chop the almonds, candied orange peel, and citron very fine.

  2. In a bowl, mix the chopped ingredients with flour, sugar, and cinnamon or mace.

  3. Add the whites of the eggs and mix until combined.

  4. Roll the mixture into balls about the size of a large marble.

Bake

  1. Place the balls on wafer paper and bake in a preheated oven at 350°F (175°C) for 20 minutes.

  2. Bake until very crisp but not deeply colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavor of the cookie.
Whites of eggs
Bind the chopped ingredients into a dough that holds its shape.
Flour
Adds a little structure so the balls hold together while baking.
Sugar
Adds sweetness and helps the surface brown and crisp as it bakes.
Candied orange peel
Adds concentrated citrus flavor and chewy sweetness throughout.

The step that matters

Bake until very crisp but not deeply colored. Egg white and sugar set and dry out as they bake, so the balls become crisp. Browning from sugar happens quickly at high heat, so stopping before deep color keeps the flavor mild and the texture crisp rather than bitter.

Swap the orange

How well each one fits the dish's main ingredients (almond, flour, sugar, cinnamon, egg):

Fit is the average pairing score against almond, flour, sugar, cinnamon, egg. Candidates are from the same food group and used in at least 100 recipes.
