Make the batter

  1. Cream the egg yolks with the sugar.

  2. Cream the butter with part of the flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Adds sweetness, helps tenderize the crumb, and promotes browning.
Eggs
Add structure and richness, and the whites lighten the batter when beaten.

The step that matters

Fold in the well-beaten egg whites. The whites hold air that makes the cake light. Stirring too vigorously or too long deflates the foam, leaving a denser cake.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, butter, egg, almond):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, flour, butter, egg, almond. Candidates are from the same food group and used in at least 100 recipes.
