Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Sift the flour, baking powder, and salt together.

  2. Add the shortening and milk, mixing as you would for baking powder biscuits.

  3. Divide the dough and roll it out to ½ inch thickness.

  4. Place one layer in a large flat pan and butter the top to prevent sticking.

  5. Roll out the second half of the dough and place it on top of the first layer.

Bake and assemble

  1. Bake in a 400°F (200°C) oven until done.

  2. Carefully raise the upper crust and spread the lower layer with crushed and sweetened strawberries.

  3. Replace the upper crust and spread it with more strawberries.

  4. Dot liberally with butter before serving warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the shortcake together after baking.
Baking powder
Releases gas during baking so the shortcake rises and turns light and tender.
Shortening
Coats flour particles to keep the crumb tender and flaky rather than tough.
Milk
Hydrates the flour to form the dough and adds moisture and browning.
Butter
Adds richness and flavor, and its top layer keeps the crust from sticking.

The step that matters

Carefully raise the upper crust. The baked layers are fragile and can crack or break while hot. Lifting them gently with a wide spatula helps keep the crust intact for the strawberry filling.
