Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, spoonable texture.
Eggs
Add richness and help set the custard, giving the pudding a smooth, creamy structure.
Milk
Forms the liquid base that the tapioca swells in and that the eggs enrich.
Sugar
Adds sweetness and balances the flavour of the eggs and milk.

The step that matters

Stir the egg mixture into the cooked tapioca and mix well. Eggs can curdle or scramble if they meet very hot liquid directly. Because the tapioca is removed from heat before the eggs are added, the mixture should be stirred thoroughly so the eggs blend in evenly and the custard stays smooth.
