What each ingredient does

Rice
Forms the bulk of the dish, with its starch softening and swelling as it cooks in water.
Milk
Adds richness and a softer, creamier texture to the cooked rice.

The step that matters

Do not stir the rice while it boils. Stirring releases starch from the grains, which makes the rice gummy and sticky. Adding the rice slowly to a steady boil helps the grains cook separately and evenly.
