Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides sweetness and forms the crystal structure of the fudge as it cooks.
Maple syrup or sugar
Adds sweetness and maple flavour to the fudge.
Rich milk
Adds fat and milk solids that give the fudge a creamy, soft texture.
Butter
Adds fat that makes the fudge smooth and creamy when beaten.

The step that matters

Cook to the soft ball stage. Sugar syrup must reach the right temperature to set correctly. Too little cooking leaves the fudge soft and runny, while overcooking makes it hard and grainy as sugar crystallises.

Swap the coconut

How well each one fits the dish's main ingredients (sugar, maple syrup, milk, butter):

  1. Vanillafits better
  2. Applefits about as well
  3. Figfits about as well
  4. Coconutthe original

Fit is the average pairing score against sugar, maple syrup, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
