What each ingredient does

Small cucumbers
Form the pickles themselves, becoming crisp and tangy as they cure in the brine.
Wild grape leaves
Add tannins that help keep the cucumbers firm during the long cure.
Coarse sea salt
Draws out water and preserves the cucumbers while seasoning the brine.
Vinegar
Adds acidity that sours the pickles and helps inhibit spoilage.

The step that matters

Keeping the cucumbers submerged in brine. Cucumbers exposed to air can soften and spoil. Keeping every piece under the brine maintains the salt and acid level that preserves them during the weeks-long cure.

Swap the grape

How well each one fits the dish's main ingredients (cucumber, vinegar):

  1. Avocadofits better
  2. Cherryfits better
  3. Limefits better
  4. Grapethe original

Fit is the average pairing score against cucumber, vinegar. Candidates are from the same food group and used in at least 100 recipes.
