Gooseberry Jelly

Ingredients

Directions

  1. Prepare unripened gooseberries.

  2. Place them in a saucepan and add enough water to just cover the fruit.

  3. Heat slowly without boiling until the fruit begins to break open.

  4. Remove from heat, mash the fruit, and place in a jelly bag to drain.

  5. Strain the juice through muslin and measure it.

  6. Return the juice to the saucepan and boil steadily, skimming carefully.

  7. Heat an equal amount of sugar and add it to the juice, then proceed as with other jelly.
