Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Sift the flour four times.

  2. Add the cream of tartar and sift again.

  3. Sift the sugar before measuring.

Make the batter

  1. Beat the egg whites to a stiff froth.

  2. Gently add the sugar.

  3. Add the flour.

  4. Add the vanilla extract.

  5. Do not grease the pan.

Bake and cool

  1. Bake for 40 minutes in a moderate oven at 350°F (175°C).

  2. Test with a broom splint to check for doneness.

  3. Turn the pan upside down to cool on its feet, allowing air to circulate freely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that provides the cake's airy structure.
Granulated sugar
Sweetens the cake and helps stabilize the whipped egg white foam.
Flour
Provides light structure to set the cake as the foam bakes.
Cream of tartar
Acidifies the egg whites, helping them whip to a stable, stiff foam.

The step that matters

Gently add the sugar. Folding the sugar in gently keeps the whipped egg white foam from collapsing. Deflating it removes the air that lifts the cake while it bakes.

Swap the vanilla

How well each one fits the dish's main ingredients (egg, sugar, flour, cream):

  1. Raisinfits about as well
  2. Vanillathe original
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against egg, sugar, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
