Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Add the beaten eggs and mix well.

  4. Stir in the flour and baking powder, then add the sweet milk.

  5. Fold in the raisins, sliced citron, and nuts.

Bake

  1. Pour the batter into pans with tubes in the center.

  2. Bake for about 30-40 minutes or until a toothpick comes out clean.

What each ingredient does

Butter
Creams with the sugar to trap air, giving a light, tender crumb and rich flavor.
Eggs
Add structure and richness, and help bind the batter as it sets in the oven.
Flour
Forms the structure of the cake as its proteins set during baking.
Baking powder
Releases gas in the batter, helping the cake rise and turn light.
Sugar
Sweetens the cake and, creamed with butter, helps create a light, fluffy texture.
Raisins
Add chewy pockets of sweetness and moisture throughout the cake.

The step that matters

Creaming the butter and sugar. Beating butter and sugar together until light and fluffy traps air bubbles that expand in the oven. Under-creaming leaves a dense cake, while overbeating can make it tough.
