Why it works: Celery and mustard are a kitchen classic. They rank in the top 2% of all ingredient pairs, and cooks put them together in 4,169 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓
Oyster Salad
Ingredients
Directions
Prepare the oysters
Scald the oysters in their liquor until plump, then drain in a colander.
Once completely cold, cut the oysters into small pieces.
Make the salad
In a bowl, mix the oysters with the chopped chicken or turkey and celery.
In a separate bowl, mash the hard boiled eggs and mix with butter, mustard, vinegar, pepper, and salt.
Pour the dressing over the oyster and chicken mixture just before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Oysters
- Provide the main seafood flavor and tender, briny body of the salad.
- Hard boiled eggs
- Mashed into the dressing to add richness and body.
- Butter
- Adds fat and richness to the mashed egg dressing.
- Mustard
- Adds sharp flavor that cuts through the richness of the eggs and butter.
- Vinegar
- Adds acidity that brightens the dressing and balances the fat.
The step that matters
Dress the salad just before serving. Acid in the vinegar and salt draw moisture out of the oysters and celery over time, so the salad becomes watery and loses texture if dressed too early.
Swap the celery
How well each one fits the dish's main ingredients (oyster, chicken, egg, butter, mustard, vinegar, pepper):
- Tarragonfits better
- Capersfits better
- Parsleyfits about as well
- Celerythe original
Fit is the average pairing score against oyster, chicken, egg, butter, mustard, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
