What each ingredient does

Quinces
Provide the fruit flavour and natural pectin that lets the juice set into a jelly.
Sugar
Adds sweetness and helps the jelly set firm and hold its shape.

The step that matters

Boiling the juice with sugar. Quince juice needs enough sugar and a sustained boil to concentrate and reach the setting point. Boiling too briefly leaves the jelly runny, while overcooking can make it stiff and dull in flavour.
