What each ingredient does

Grated chocolate
Provides the chocolate flavor and body once it is wetted and stirred into the hot milk.
Milk
Forms the liquid base of the drink and carries the chocolate flavor.

The step that matters

Churning until frothy. Milk must be hot enough to froth well, but churning steadily keeps it from scorching on the base. Stopping too early leaves the drink flat, while overheating can make the milk taste cooked.
