Ingredients

Directions

  1. Work one-fourth of the butter into the flour until it resembles sand.

  2. Sift the cream of tartar and baking soda into the flour.

  3. Add enough cold water to bind the mixture and work it smooth.

  4. Dredge flour over a clean surface and rolling pin.

  5. Roll the paste to about ½ inch thick.

  6. Spread one-third of the remaining butter over the surface.

  7. Fold the paste, dredge with flour, and roll it out again.

  8. Repeat with another portion of butter, folding and rolling again.

  9. Spread the last portion of butter, fold, and roll for the final time.
