Fricasseed Chicken

Ingredients

Directions

  1. Wash the chicken and soak it in cold salt water for 30 minutes.

  2. Place the chicken skin side down in a pot with sliced salt pork.

  3. Sprinkle with pepper and add enough hot water to cover the chicken.

  4. Cover and stew slowly until tender, about 2 hours.

  5. Remove the chicken and skim off excess fat from the liquid.

  6. Mix butter with flour to thicken the remaining liquid and boil until the flour is cooked.

  7. Serve the chicken on split hot shortcakes or biscuits, or on toast, and pour gravy over it.
