Beefsteak Roll

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the roll

  1. Pound the sirloin steak well and season with salt and pepper.

  2. Make a dressing by mixing chopped bread with butter, salt, pepper, sage, and a little warm water.

  3. Spread the dressing on the meat, then roll it up tightly from one end and tie with strings.

Bake and serve

  1. Place the roll in a dripping pan with a little water.

  2. Bake at 350°F (175°C) for about 45 minutes.

  3. Serve warm or sliced cold for tea.

What each ingredient does

Sirloin steak
Forms the outer wrap, and its tenderness carries the whole roll once it is pounded and baked.
Chopped bread
Makes up the dressing that soaks up juices and keeps the filling moist inside the roll.
Butter
Adds fat to the dressing, giving richness and moisture as it melts during baking.
Sage
Adds a savory, aromatic herb flavor to the bread dressing.

The step that matters

Rolling the steak tightly. A loose roll lets the dressing spill out and leaves gaps that cook unevenly. Pounding the steak evenly first helps it roll snugly and hold its shape while baking.

Swap the sage

How well each one fits the dish's main ingredients (pepper, bread, butter):

  1. Parsleyfits about as well
  2. Sagethe original
  3. Thymefits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
