Lamb with Rice

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the lamb

  1. Partly roast the lamb and cut it into flat pieces.

  2. Place the lamb in a dish, season with salt, and pour water over it.

Make the rice

  1. Boil the rice until dry.

  2. Season the rice with salt.

  3. Stir in the butter and egg yolks, reserving some butter for later.

Bake and serve

  1. Spread the rice mixture and remaining egg yolks over the lamb to form a covering.

  2. Bake until light brown at 350°F (175°C).

What each ingredient does

Lamb
Forms the meat base, which is partly roasted and then baked under the rice covering.
Rice
Forms the covering layer that sets and browns over the lamb during baking.
Butter
Adds fat and richness to the rice mixture, carrying flavour and softness.
Egg yolks
Bind the rice mixture and help it set and brown in the oven.

The step that matters

Baking until light brown. Egg yolks in the rice covering set as they heat, and the surface browns through Maillard reactions. Removing it too early leaves the covering soft and pale, while baking too long can dry it out.
