Directions

Prepare the chicken

  1. Boil the chickens until tender.

  2. Remove the meat from the bones and chop it finely.

  3. Chop the celery separately, not as finely as the chicken.

Make the dressing

  1. In a bowl, combine vinegar, mustard, melted butter or oil, egg yolks, salt, and pepper.

  2. Beat the dressing and heat it over low heat, stirring until nearly cold.

Combine and serve

  1. Mix the dressing with the chopped chicken and celery, then add the chopped hard-boiled eggs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify the butter or oil into the dressing and thicken it into a creamy texture.
Vinegar
Adds acidity that sharpens the dressing and balances the richness of the fat and yolks.
Melted butter or oil
Provides fat that gives the dressing a smooth, rich mouthfeel.
Mustard
Adds sharpness and helps stabilise the emulsion of the dressing.
Celery
Adds crunch and a fresh, slightly vegetal flavour that contrasts the soft chicken.

The step that matters

Heating the dressing over low heat. Egg yolks thicken when heated but can scramble and curdle if the heat is too high or unattended. Low heat, with constant stirring, lets the dressing thicken smoothly before it cools.

Swap the celery

How well each one fits the dish's main ingredients (chicken, vinegar, mustard, butter, egg, pepper):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, vinegar, mustard, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
