What each ingredient does

Egg whites
Whipped to foam, they add air and a light, fluffy texture to the frozen mixture.
Sugar
Dissolved into the syrup, it sweetens the ice cream and keeps it softer when frozen.
Pineapple
Supplies the main fruit flavor, both as juice in the syrup and as diced pieces.

The step that matters

Adding the beaten egg whites. Egg whites must be beaten to a stiff foam and added to a mixture that is only nearly frozen, so they trap air and stay light instead of deflating or turning watery.
