Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scallops
Main protein that cooks through and browns on the outside while staying tender inside.
Cracker crumbs
Form a crisp, browned coating that protects the scallops during frying.
Egg
Binds the crumbs to the scallops so the coating adheres during frying.

The step that matters

Drying the scallops. Surface moisture turns to steam in hot oil and can loosen the crumb coating, so the scallops should be patted dry before breading. Crowding the basket also drops oil temperature, which leads to greasy rather than crisp results.
