Stuffed Peppers

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut off the stem end of the sweet peppers and remove the seeds with a teaspoon handle.

  2. Boil the peppers in water for five minutes.

  3. In a bowl, mix softened bread crumbs, minced meat, coarse sea salt, black pepper, butter, and onion juice to make the stuffing.

  4. Stuff the peppers with the mixture and place them in a baking pan with about 1 inch of stock.

  5. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

  6. Remove the peppers to a platter and pour a little stock over them.
