What each ingredient does

Chicken
Forms the main body of the salad, becoming tender when boiled and then chopped.
Egg yolks
Mashed into a paste, they emulsify with the butter and mustard to make a thick, creamy dressing.
Melted butter
Adds richness and fat, giving the dressing a smooth, silky texture.
Vinegar
Adds acidity that brightens the dressing and balances the richness of the yolks and butter.
Mustard
Its emulsifying compounds help hold the dressing together and add sharp flavor.
Celery
Adds crisp texture and a fresh, aromatic flavor to the chicken.

The step that matters

Mixing the egg yolks into a paste before adding the liquids. Mashing the yolks smoothly first lets them absorb the melted butter and vinegar gradually, forming a stable emulsion. Adding everything at once can cause the dressing to separate and turn greasy.

Swap the celery

How well each one fits the dish's main ingredients (chicken, pork, egg, pepper, mustard, vinegar, butter):

  1. Tarragonfits better
  2. Thymefits better
  3. Garlicfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, pork, egg, pepper, mustard, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
