Melton Veal

Ingredients

Directions

  1. Butter a large bowl.

  2. Line the bowl with slices of hard-boiled eggs.

  3. Layer thin slices of veal and ham, sprinkling pepper, coarse sea salt, and grated lemon rind on the veal, and pepper and lemon on the ham.

  4. Fill the bowl nearly to the brim.

  5. Make a thick paste with Sperry Flour and water, and cover the top, pressing tightly on the edges.

  6. Add water to the pot, ensuring it doesn't boil over the paste, and boil for three hours.

  7. Leave the paste on until nearly cold, then do not turn it out until the next morning.

  8. Slice thinly and serve as a supper, breakfast, or side dish.
