Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hough (beef)
Provides meat and connective tissue that break down into gelatin, giving the broth body.
Sawed bones (in the method)
Release collagen and minerals over long simmering, adding richness and body to the broth.
Onions
Contribute savory sweetness and aromatic depth as they cook down into the broth.

The step that matters

Keep the broth at a gentle simmer. A hard boil over a long cooking time makes the broth cloudy and can emulsify fat into it. Gentle heat lets collagen convert to gelatin slowly while keeping the liquid clear.

Swap the mace

How well each one fits the dish's main ingredients (beef, onion, carrot, turnip, clove):

  1. Celeryfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beef, onion, carrot, turnip, clove. Candidates are from the same food group and used in at least 100 recipes.
