Fine Onion Sauce

Ingredients

Directions

  1. Peel and boil the onions in plenty of milk, seasoning with coarse sea salt.

  2. Once cooked, remove the onions from the milk and slice them very thin.

  3. Return the sliced onions to the saucepan with the saved milk.

  4. Add butter dredged with flour and season with powdered mace or nutmeg.

  5. Boil again until the onions are soft enough to mash and thicken the milk.
