Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Provides fat and rich flavor, forming the body of the sauce.
All-purpose flour
Thickens the butter and water mixture as it boils.

The step that matters

Stir the butter mixture into the boiling water. Flour rubbed into butter helps it disperse without lumps when stirred into hot liquid. Adding it to boiling water lets the starch swell and thicken the sauce evenly.

Swap the onion

How well each one fits the dish's main ingredients (butter, flour, parsley, thyme):

  1. Shallotfits better
  2. Parsnipfits better
