  3. Combine everything in a frying pan with the strained stock.

  4. Simmer for 10 minutes, then serve with diced toast around the dish.

What each ingredient does

Cooked meat
Provides the main body and protein of the dish.
Onion
Adds aroma and savoury sweetness as it softens.
Flour
Thickens the liquid slightly so it clings to the meat.
Strained stock
Adds moisture and savoury flavour to the finished dish.

The step that matters

Reducing the boiled meat to ½ pint. Long simmering concentrates the cooking liquid and draws flavour from the meat into it. Boiling hard can toughen the meat and reduce the liquid too fast, so keep a gentle simmer and check the volume against the half-pint target.

Swap the onion

How well each one fits the dish's main ingredients (meat, pepper, flour):

  1. Shallotfits better
  2. Capsicumfits better
  3. Okrafits better
  4. Onionthe original

Fit is the average pairing score against meat, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
