Fried Salt Pork

Ingredients

Directions

  1. Fry the salt pork in a skillet until cooked through.

  2. Remove some fat from the skillet to prevent the apples from becoming oily.

  3. Slice the acid apples into thick rounds, about ½ inch thick.

  4. Fry the apple slices in the skillet until tender and browned on both sides.

  5. If using cold potatoes, slice them and brown in the same skillet until heated through and golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt pork
Provides fat and savory flavor as it renders in the skillet.
Acid apples
Add tartness that balances the rich, fatty pork.
Cold potatoes
Brown in the rendered fat, adding crisp golden texture and substance.

The step that matters

Removing some fat before frying the apples. Apples cooked in excess rendered fat absorb it and turn greasy. Leaving only a thin layer lets the slices brown and soften instead of soaking up oil.

Swap the apple
