Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Roll out the puff pastry to ½ inch thick and line the bottom of a pie dish.

  3. Form a border with forcemeat around the edges.

Fill and bake

  1. Cut sweetbreads into pieces and layer them in the dish.

  2. Add artichoke bottoms, cock's combs, truffles, asparagus tops, fresh mushrooms, and hard‑boiled egg yolks.

  3. Season with pepper and coarse sea salt.

  4. Almost fill the pie with water, cover it, and bake for 1 hour.

  5. After baking, pour in rich veal gravy thickened with a little cream and flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the tender, rich meat that forms the body of the filling.
Puff pastry
Forms a flaky, crisp crust that rises and browns in the oven.
Hard-boiled egg yolks
Add richness and a creamy texture to the filling.
Rich veal gravy
Adds moisture and savory depth to the filling.
Flour
Thickens the veal gravy so it coats the filling.
Cream
Adds richness and smoothness to the thickened gravy.

The step that matters

Almost fill the pie with water before covering and baking. Water left in the dish turns to steam under the lid, gently cooking the sweetbreads and vegetables so they stay moist rather than drying out during the hour in the oven.

Swap the asparagus

How well each one fits the dish's main ingredients (artichoke, truffle, mushroom, egg, pepper, veal, cream):

  1. Asparagusthe original
  2. Spinachfits about as well
  3. Shallotfits about as well
  4. Chivefits less well

Fit is the average pairing score against artichoke, truffle, mushroom, egg, pepper, veal, cream. Candidates are from the same food group and used in at least 100 recipes.
