Mutton Pasty

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Using a sharp knife, cut the lean meat from an uncooked shoulder of mutton into thin slices.

  2. Place the slices in a pie dish and sprinkle with pepper and coarse sea salt.

  3. Nearly fill the dish with gravy made from mutton shanks, a little beef, two fried onions, a few peppercorns, and a small bit of mace.

Top and bake

  1. If serving cold, cover with puff pastry and bake at 400°F (200°C).

  2. If serving hot, cover with mashed potatoes or a pie crust and bake.
