Mutton Rolled

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Carefully bone the shoulder of mutton without damaging the skin.

  2. Cut all the meat from the skin and mince it finely.

  3. Season the minced meat with pepper, nutmeg, clove, parsley, thyme, marjoram, pounded onion, and beaten egg yolk.

  4. Roll the seasoned meat tightly in the skin and tie it securely.

Bake and make the gravy

  1. Bake in a 350°F (175°C) oven for 2 to 3 hours, depending on the size of the mutton.

  2. Make gravy from the bones and parings, seasoning with onion, pepper, and salt.

  3. Strain the gravy and thicken it with flour and butter.

  4. Add vinegar, mushroom ketchup, soy sauce, and lemon pickle to the gravy.

Garnish and serve

  1. Garnish with meatballs made from grated bread and some of the minced meat.

What each ingredient does

Mutton shoulder
Provides the main body of meat that is rolled, tied, and baked until tender.
Egg yolk
Binds the minced meat so the seasoning stays together during rolling and baking.
Flour
Thickens the gravy so it coats the roll rather than running thin.
Butter
Enriches the thickened gravy, adding richness and smooth body.
Onion
Adds savoury depth to both the meat filling and the gravy.
Vinegar
Adds acidity that brightens the rich gravy and balances its fattiness.

The step that matters

Rolling and tying the meat. The roll must be tight and securely tied so the filling holds its shape and cooks evenly. Loose rolling lets the minced meat spread and dry out during the long bake.

Swap the onion
