To Roast Partridges

Ingredients

Directions

  1. Hang the birds until they are ready to prepare, ensuring they do not become offensive.

  2. Pick, draw, and singe the birds, then wipe the inside thoroughly with a clean cloth.

  3. Truss the birds with the head under the wing and the legs drawn close together or crossed.

  4. Flour the birds when first placed over the fire and baste generously with butter.

  5. Cook for 30 to 40 minutes, less time if you prefer them undercooked.

  6. Remove the crop through a slit in the back of the neck, clip the claws, and hold the legs in boiling water for 1 minute to make skinning easier.

  7. Serve with bread-sauce and good brown gravy, pouring a little gravy over the birds.
