Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Goose

Ingredients

Directions

Prepare the goose

  1. Select a goose with clean white skin and plump breast.

  2. Hang the goose for a few days if weather permits to improve flavor.

  3. Pluck, singe, draw, wash, and wipe the goose.

  4. Cut off the neck close to the back, leaving enough skin to turn over.

  5. Cut off the feet at the first joint and separate the pinions.

Stuff and truss

  1. Beat the breast-bone flat with a rolling pin and skewer through the body.

  2. Insert another skewer into the small of each leg and run it through to the side-bone.

  3. Make a hole in the skin for the rump to keep in the seasoning.

  4. Prepare a sage and onion stuffing with the ingredients and fill the body of the goose.

  5. Secure the stuffing by passing the rump through the hole and tying the neck skin to the back.

Roast and serve

  1. Roast the goose over a brisk fire, basting well for 1½ to 2 hours, depending on size.

  2. Remove the skewers and serve with gravy and apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat, and its rich fat renders out and bastes the bird as it roasts.
Onions
Add sweetness and moisture to the stuffing as they soften and cook.
Bread crumbs
Form the body of the stuffing and absorb the juices and fat released during roasting.
Butter
Adds richness and fat, and helps the surface brown.
Sage
Adds an aromatic herb flavor to the stuffing.

The step that matters

Basting well during the roast. Goose fat renders out of the skin during roasting, and regular basting keeps the surface moist and helps it brown evenly. Because cooking time depends on size, check that the bird is cooked through rather than relying on the clock alone.

Swap the onion

How well each one fits the dish's main ingredients (sage, bread, butter, pepper):

  1. Capsicumfits better
  2. Shallotfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against sage, bread, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
