Why it works: Flour and caraway match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 1,435 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

A Light Seed Cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Beat the egg yolks and whites together for 30 minutes.

  2. Mix in the powdered sugar until well combined.

  3. Gradually add the flour and caraway seeds, stirring until smooth.

Bake and cool

  1. Pour the batter into a baking pan.

  2. Bake in a hot oven at 400°F (200°C) for 30 minutes.

  3. Immediately turn the cake out of the pan and let it cool upside down.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks and whites
Trap air during beating, giving the cake its light, risen structure.
All-purpose flour
Forms the gluten network that sets the cake's structure as it bakes.
Powdered sugar
Sweetens the batter and dissolves smoothly into the eggs for a fine crumb.
Caraway seeds
Adds a warm, aromatic flavour to the cake.

The step that matters

Immediately turn the cake out of the pan. Hot cakes are fragile and can collapse or tear if left to sit, and turning them upside down while still warm helps them cool without sinking.

Swap the caraway

How well each one fits the dish's main ingredients (egg, sugar, flour):
