Chicken Salad

Why it works: Mustard and lettuce match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,356 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Chicken Salad

Ingredients

Directions

Prepare

  1. Boil the chicken until very tender, then remove and cut into small strips.

  2. Scrape and wash the celery, then cut the white part into pieces about ¾ inch long.

Assemble and dress

  1. Mix the celery pieces with the chicken strips.

  2. Arrange the delicate leaves of the celery around the edges of the dish.

  3. For the dressing, rub the yolks of the hard‑boiled eggs into a smooth paste with olive oil, mustard, salt, and vinegar.

  4. Pour the dressing over the salad just before serving.

  5. You can substitute white heart lettuce for celery and use any other dressing if preferred.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the salad; boiling until very tender keeps the strips soft to eat.
Egg yolks
Mashed with oil and mustard, they form a smooth, emulsified base for the dressing.
Olive oil
Adds fat and richness to the dressing, carrying flavour and smoothing its texture.
Celery
Contributes crisp texture and fresh, mild flavour to the salad.
Vinegar
Adds acidity that sharpens the dressing and balances the rich yolk and oil.

The step that matters

Rubbing the yolks into a smooth paste. Yolks must be worked thoroughly with the oil and mustard so they emulsify into a smooth dressing; lumps of yolk or oil that separates will make the dressing grainy and greasy.

Swap the lettuce

The recipe marks lettuce as optional. How well each one fits the dish's main ingredients (chicken, celery, egg, olive, mustard, vinegar):

  1. Lettucethe original
  2. Capsicumfits about as well
  3. Broccolifits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against chicken, celery, egg, olive, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
