What each ingredient does

Chicken
Forms the bulk of the salad, providing the meaty substance that the dressing coats.
Hard-boiled eggs
Yolks mashed into the dressing give it a rich, creamy body.
Table oil or melted butter
Fat that emulsifies with the mashed yolks, adding smoothness and richness to the dressing.
Vinegar
Adds acidity that brightens the dressing and balances the sweetness and richness.
Sugar
Adds sweetness that balances the sharpness of the vinegar and horseradish.
Grated horseradish
Contributes sharp, pungent flavor that cuts through the richness of the dressing.

The step that matters

Beat the dressing well for 1½ hours. Long, thorough beating incorporates the oil or butter into the mashed yolks, creating a stable, smooth emulsion. Under-beaten dressing can separate or feel greasy and grainy when mixed with the chicken.

Swap the celery

How well each one fits the dish's main ingredients (chicken, rice, egg, butter, pepper, mustard, vinegar):

  1. Tarragonfits better
  2. Capersfits about as well
  3. Turmericfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, rice, egg, butter, pepper, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
