Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 350°F (175°C).
In a bowl, beat together the sugar and 6 eggs.
Add 2 cups of flour, 1 teaspoon of baking soda, and 2 teaspoons of cream of tartar; mix well.
In another bowl, combine 3 egg yolks, 1 tablespoon of flour, and 2 tablespoons of cornstarch; sweeten and flavor to taste.
Stir in 1 pint of fresh milk and cook until nearly cold.
Spread the cream mixture on the cake.
Whip the whites of 4 eggs until stiff, adding sugar to taste.
Spread the whipped egg whites on top and lightly brown in the oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
