A Delicate Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the yolks of the eggs very well.

  3. In a bowl, mix the beaten egg yolks with sugar, milk, and warmed butter.

  4. Stir in the flour until well combined.

Bake and serve

  1. Pour the mixture into large cups and bake until set.

  2. To make the sauce, combine cider or molasses with loaf sugar and melted butter.

  3. Turn the puddings out and pour the sauce over them before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Set the custard structure as they cook, giving the pudding a tender, rich body.
Flour
Thickens the batter slightly so the pudding holds its shape after baking.
Butter
Adds richness and a smooth, tender mouthfeel to the pudding.
Milk
Provides liquid that gives the custard a soft, creamy texture when set.

The step that matters

Bake until set. Egg yolks thicken as they heat, so underbaking leaves the pudding runny while overbaking can make it dry and grainy. Watch for a set centre rather than relying on time alone.
